We are using  1.6.1

How can only an instructor receive an e-mail from a Forum, but not the students?

Update the Forum and set "Force everyone to be subscribed" to "No", or better, set it to "Subscriptions are not allowed".

Then click on "Show/edit currrent subscibers" and turn editing on to unsubscribe all students.
