My students frequently ask a method for efficient filtering of email forum notifications.. Can the course short name be inserted as tag in the email subject?

The course shortname is already included in the email subject! 
Also, for generic filtering of all Moodle mail, note this header line:

The thing I really would like in the subject is the forum name.
