If I were you, I would put the grade breakdown into the teacher comment to student and use some formula to allocate the total assignment grade. This gives the student the feedback that you want without needing to program something.
But if you want to write a plug-in there are 5 vars in the assignment submission table that are available for such purposes. So, you don't need to modify the standard Moodle database structure, which is preferable.
