Hi Danielle,

It's quite quick to move discussions one-by-one to an archive forum in the same course by using the "Move this discussion to" drop-down menu (top right of the page). Alternatively, the option of granularised backup is provided in Moodle 1.6 i.e. particular forums may be backed up and restored.
