We were doing applications for a couple of positions and decided to use the quiz module for a test we gave the applicants. A number of the questions are very subjective and we didn't want the applicant to know their score. I made the following changes and they were prevented from seeing their scores after taking the quiz:

Uncheck all the review boxes and comment out lines 276 and 300 in \mod\quiz\view.php. I've included part of the code and you'll see the affected lines in red.

Note that they would still be able to see their grades in the gradebook - I didn't worry about this since we didn't allow them to linger around the course looking at stuff! You'll have to figure that one out, also.
