Any assignment in which you have the student submit a document will work. The document the student uploads is stored in the backup file created by Moodle. So, when you create a backup of the class and download the backup and unzip it, you have all the files the students submitted for their assignments.

What Moodle Grader do is allow you (with a little programming) to press one button to access a student submission. I've written several scripts that will for instance allow you to open a document with one click. You can also download, run, and edit a Python Program (for instance) with one mouse click.

This eliminates the need to click on the student to grade, click on the file to download, run the program, and whatever else might be required to grade a student submission.
