I fixed it!
For future reference: I was using Node's version 16.14 which is the one suggested on the Moodle Documentation, but actually, my npm install script only worked when I downgraded my node version to version 14.19.
Don't know if it was a problem with my Moodle Installation or my computer, but It works fine after this downgrade.
