Ah, that is a perfect use case for notes - documenting the overriding or changes of grades or completions.
I've always thought we really need a "Student overview" report fro Teachers which would be just that: grades, completions, dates, notes, assignment feedbacks, etc. - Everything you need to get an overview of their progress on one screen.
