My client has asked that guests do not have access to the Moodle site I am working on. I'm looking for a way to hide or remove the guest role from the site. If anyone knows how to get this accomplished, please share.

If you don't need a visible front page then you can shut your site off to guests from Site administration > Security > Site security settings and tick 'Force users to log in'.

Thanks for your suggestion. I have gone into the site administration and turned on the 'Force users to log in' option per your comments above. I then signed out and cleared my cache before going to the Moodle login page. However I still find the Sign in as guest option appearing on the screen.
Any ideas on what I did wrong?

Go to Site administration > Plugins > Authentication and scroll down and hide the Guest login button.
