If your server is set up properly with scheduled tasks running, then quiz attempts will be automatically submitted once the time limit has passed, even if the student is offline, or not looking at the quiz. Also, once the time limit is passed, then even if the scheduled task is not working for some reason, still the attempt witll be submitted immediately if the student tries to access it.
