Is it possible for the teacher to receive an email when a student changes something in a workshop (I have the same question for the assignment module)?

I am not particularly sure about Workshop, since there seem to be no option in the settings on Moodle 1.53.
But for the Assignment module, yes. You can do this by setting the option "Email alerts to teachers" to yes in the second screen while creating an assignment activity (of course probably except offline assignments).

Hi, the next version will have this feature,
what I did as work arround - use a forum - and give feedback in a forum - then you will have the possibility of emailnotification and students may give feedbacks too and you may grade this in the forum - not the perfect solution - but it works -
