I have further info about the problem the original poster referred to.

Here’s what we’ve discovered:

Taking the quiz directly in Moodle = No formatting problem with answers
Taking the quiz as an external tool in another LMS using the IRPM Moodle LTI = No formatting problem with answers
Taking the quiz through ProctorExam = Formatting from answers lost.
