It is something the developers have looked into, unfortunately at this stage it isn't possible. The limitation is on the Moodle side, the fields they make available through their API only allow a single value to be stored.
The only work around we have is that we added the ability for VETtrak to duplicate an existing Moodle Course from an Occurrence mapping that could then be mapped to a that VETtrak Occurrence.
