I have been to Hawaii twice and loved it! Was some time ago though, but still have fond memories.

The student name field simply uses the function fullname() which takes into consideration alternative names. Please see https://github.com/mdjnelson/moodle-mod_customcert/blob/MOODLE_310_STABLE/element/studentname/classes/element.php#L46 and https://github.com/moodle/moodle/blob/master/lib/moodlelib.php#L3535. To change this behaviour it would require a developer to change the logic of that studentname element.
