Tracking Teachers/Instructors Activity On Moodle

Hello,

We need to track teachers grading activity on moodle. The manager wants to  be able to see all submissions site wide as at a date, number of submissions marked for example in a time period by all teachers and if possible time taken to mark/grade submissions by Teachers. Can anyone suggest how to get this done through moodle please or maybe suggest a plugin that can solve this issue.

Site wide? I'm not aware of anything. I think you're going to require a custom admin report.

As Howard suggested, custom SQL is probably needed.  Moodle's database contains the information you seek, you just need to get it out in the way that you want it. 

A good place to start is by exploring List of SQL Contributed reports.
