Hi Joel.
You are not going to get any meaningful data out of Storyline SCORM file. You will only get timespent, score and status. The interactions report might capture the odd text entry or numerical value as a variable but won't return anything like what you are hoping to return and it's certainly not easy to write a report and extract it in a clean way. Believe me, I have tried.

I would use a Moodle activity for this such as questionnaire or feedback, and make it conditional upon completing the SCORM.

(I did once manage to use an embed to put Moodle in Storyline/Rise and did some theme work to strip out the headers and footers so it looked as though the Moodle survey was part of the SCORM, but it was a lot of work and not worth the effort).
