I have put some quizzes on Moodle but when I created them I forgot to include the main settings that allow my students to do these exercises (the deadline, assessment, question behaviour, layout). How can I do to implement these exercises now and add the settings they need for my students to do them.

Do you mean you have created the questions but have not put them in quizzes? In which case, add a quiz to the course, and add the questions. If you already have created the quizzes, you can edit the settings at any time.
