Hi Kieran,
it might not be exactly the same, but I encountered a similar error when deleting the hvp activities, some resources/activities didn't work. The reason was that the grade items of the deleted hvps were kept in the gradebook and therefore, it caused some error. Have you checked the gradebook?

Any courses which had hvp activities in won't let me access the gradebook. I get the error message saying they can't find the hvp component. So i'm starting to realise that the uninstall didn't work properly, but I'm not sure how to fix it.

In this situation I might be tempted to reinstall the plugin, and then disable it (not uninstall) to see if that works.

Ouch.
Did you try installing through the GUI, it might be better to unzip the module in /mod folder so it’s ‘just there’. Obviously use the same version you had previously.
