Long story short for the non (not so) technical folks like myself:
When you are going from a shared hosting service like Bluehost to AWS when they (or you) set up the servers keep in mind the size of the courses and (as this forum guided me) to the "max packets allowed" settings as this prevented me from being able to create the backup file for a couple of my larger courses-once that setting was changed on server then we are back to good Moodling.
