This week I have noticed that a course completion email is generated and sent out automatically when delegates complete a course.
If we want to stop this system email automatically going out, how do I switch it off?
(I can see/edit this email in the Language pack, under 'core_completion / coursecompletedmessage)

You can control this in Site admin > Messaging > Notification settings, under the Course completion option. Set the Email option to Disallowed to disable it site wide for email, or uncheck the box on the far right Enabled column to disable it completely for all types of notification.
