I'm probably guilty of being pedantic but 'git pull' isn't going to get you from branch to another anyway.
I would never recommend just doing a major branch update on a live site without testing first. Or, at the very least, having a full set of backups first.
So, I guess the point is that you would be checking out the prospective new version somewhere well away from your live code.
