Moodle only issues (MUA - not Moodle User Association, rather Mail User Agent) e-mail. It needs a MTA to send mail - which is in your case Gmail. So that account must have been set to keep a copy, likely by Cc or Bcc.
Either way, the administrator can see "private" messages in Moodle.
