Hello,
my approach would be the following:
  1. I create categories in the question bank (Maths, History, etc.) and move the questions to the corresponding category.
  2. I create a single quiz for each subject and add overall feedback, so that students get a feedback based on the grade.
  3. To have an overview of the score for the whole assessment, i.e. for the sum or the mean of all the subjects, I'd use the gradebook.
It might need more preparation and configuration, but once implemented it can be escalated and you can monitor the results easily.
