Ok, so the problem was not related to moodle itself, but to the content added to the course.
Seems that some text was copy-pasted from other course, and the text included some extra code only visible when enabling HTML view.
So this generated a conflict when adding new topics to the course.
Deleting the extra code solved the problem.
