Course Administration should have a reset button and it lets you choose what you reset. Be really careful with this. It wipes anything you say to wipe.
You could go to each package, search the student, check all attempts and delete. Or (VERY DANGEROUS) go into the database look for the student ID and the course in the scoes_track (I think) table and remove all the entries. I really don't recommend that, so much room for bad bad trouble...but you could. I have in the past (white knuckles, tense, yikes!)
