I think the second point can be implemented in easy way too. There is already an option to set number of columns. Instead of that single option, we can have 2 options.. first, asking for number of columns in large screens and second, asking for number of columns in small screens. That's it.
I also noticed a weird problem while using Grid. When the lists (bulleted or numbered) are entered in Grid content, the text gets overlapped with background and becomes unreadable. Screenshot has been attached to show that.
