In the Workshop module there is a feature where you can publish assignments and feedback for the other students. Is this possible in assignment activity?

Just include your sample assignment and feedback in the assignment description. If they seem to be too long and cause a long scroll problem, use a Generico filter widget to hid them with a button or tab/tab item combination similar to the included picture.
