Despite having enabled the cohort sync plugin, I am unable to use the cohort sync option as it does not appear in the drop down menu. I have read all available documentation on all aspects of cohort sync and I just don't understand what I am doing wrong for it not to show. Any help/advice would be greatly appreciated:

Have you created any cohorts yet in the site or category of the course? You need to have at least one available cohort already created for this option to show up when adding as any enrolment method in a course.

Thanks so much for a quick response! Yes, I had created a test cohort named Lawyers and Co. and added 9 users to it in order to try out cohort sync:

This is a category level cohort. So it will only be available to courses in that category. If you makea site level category you can test whether you can add the Cohort enrollment method to the course to make sure it is all working as it should be.
