What I have done in this type of situation is to rewrite the name of the theme using CAPITAL letters...To do this you will need access to the Server where tge folder is listed under your Moodle/theme/adaptable
So adaptable = ADAPTABLE
This will not be read by Moodle and so you can transfer to the default theme Boost which should allow you to make changes to the Adaptable theme via the settings you used originally.
