I haven't been able to find any obvious way to export and print a collection of forum discussions from students, is this possible?

Hi Laura,

Go into the forum and click "Search forums" button without entering in any text to search. You jump to advanced search.
Enter the student's full name in "This name should match the author"
Change date fields or add other content only if you want to be more restrictive. Click the search forums button at the bottom.
Now CTRL-P (or COMMAND-P) should allow you to print (if not, File -> Print in the browser's menu).
