TL;DR
The option to remove a submission (of a student in an assignment) was introduced in Moodle 3.7.
The submission status stays "Submitted for grading" after a submission is removed by or for the student, while in my opinion it should change to "No submission".

There I wrote in detail about the issue, and why it's very problematic in my opinion.
I've already got users feedback about how this issue is confusing them.
Could you please go and vote for this issue in the tracker, or at least share your opinion here?
