For some reason, I keep getting an error message that says "Slots cannot be added as this course has no teachers" whenever I try to add a new slot.

slots can indeed be added only if the course (in which the teacher is located) has at least one teacher. This is because every slot needs to be assigned to a teacher.
(To be precise, it needs to have at least one enrolled user that has the "mod/scheduler:attend" capability.)
Can you check the enrolment list of your course?

I got it working, I had to update the authenticated user permissions to allow mod/scheduler:attend
