I mean my students can see who's online, calendar and other things like private files. I want to remove this from them control and view and let just for admin and teachers.

Turn editing on within your course. Click on the little "gear" to edit a block. Pick "Permissions." Remove the student from "View block."

I think so, but there might be ways to do this globally. I don't know?
There might be some overall permission setting at the administrative level.
My role in my courses is "instructor," so I decide which blocks I want to show. One can decide, for example, to remove the "online user" block. But it seems that you want to show it to your administrators, but not to your students.
