What happens if I trim or prune our logstore_standard_log?

Hello folks.

Running 3.4.7 on redhat 7.1s 64 bit with php 7.1.8 and MySQL 5.7.21 community

Our logstore_standard_log is massive and I think it is affecting the performance of our moodle when users are doing quizzes.. about 25 people or more concurrently.

Our logstore_standard_log is 6.5 GB!

I am assuming that for every action, it is logged in this database, correct? What does this log "log" everything?

Would it be safe to trim it via the moodle admin front end then go in to optimize the table through sql command for that table?

Our database is using InnoDB.

What would happen to our stats if we decide to trim it? It has years of info on it
