Hello guys, would like to ask if we update our moodle platform from 2.7 to 3.5, will it affect my page settings?

It's a very vague question.
So my very vague answer is that it probably won't. But those settings might have changed between the two versions. Depending what settings you are talking about.

Settings in terms of the appearance, activities/ activity format, database. If we update the version will it affect the following?
No - you should be fine.
However, I would always recommend testing an upgrade on a copy of your site. Just to make sure.
