Hi, I'm having a similar problem with Adaptable 1.6.1 on Moodle 3.5.
(Have it on 2 different servers with the same versions).
Tried editing the css, but no luck.
Would appreciate some help.

I've added this line to the custom css, and it fixed the issue for me:
.course-content .current {
background-color: #d2f2ef!important;
}

Sorry for the slow response to your first reply and thanks for the solution.
To be honest we kinda gave up - our host service had a solution but at a cost and as we only had one teacher out of 150 who was bothered about this we decided to just leave it as it is and hope that future releases will have it resolved.
I will definately try your solution though as we would make that one person very happy if we could fix it
