I totally agree with you that Google's document convertor is a fantastic resource, but it is not without limitations. The lack of ability to convert image file types is a big issue.
I have teachers coming to me saying that the students are hand writing essays and they want to photo them to upload as assignments.
I guess I am going to have to tell them it is not possible until Google increases the file types.
