Yep, definitely can be done.
Go back and edit your quiz settings. In the TIMING section you'll need to set the quiz close date to the day you want the results published. Then in the REVIEW OPTIONS section, uncheck everything other than what's under AFTER THE QUIZ IS CLOSED.
When your students take the quiz and submit it, they won't see any score or marks or feedback until the close date.
I do this when some students are absent the day of the quiz, and I want to stop the cheating that happens when a friend who took the quiz, shows the results to a friend that needs to make up the quiz.
