Hello, I have created my first course ''Classe 1A Matematica'' and I have a question/problem.

How can I insert ''teacher(docente):.......'' under the title of my course? (which option should I click?)

Hello Sara. You need to enrol someone into the course with the role of Teacher. See Manual enrolment for how to do this. As I see you are in our Learn Moodle MOOC, this is something we cover in Week 3, in the section on How learners access your course.
