I was wondering if anyone could help me edit the main menu 'Home' tab in the Adaptable theme? I would like to change it to 'All Courses'. See Attached

You have 2 options:
1. Edit the /adaptable/lang/en/theme_adaptable.php language file (not recommended)
2. Use the Language customization tools on the front end of Moodle and search for the string and edit it there.
Option 2 is usually preferred as it should make your edit consistent across future theme upgrades.
