Is it possible, for the Moodle admin, to export the attendance report of many courses in the site, without doing it one by one?

This is not something that is currently supported by the attendance plugin but you might be able to use the custom SQL report plugin to write a report that returns the data and exports it.

Using the configurable reports plugin, you could create a system wide attendance report.
