Hi Elizabeth,
it's not currently supported, Attendance uses a core function used by all activity modules to display the grading and I haven't seen other activity modules that let you define the default grading method either.
Let me know if you spot a different activity module that does let you change the default grading type for that activity and feel free to get in touch privately if you want to fund some development time to add support.
