That isn't the dashboard page (in your image), though. It is the view of the course itself.
There are quite a few course formats to choose from, irrespective of the theme used (which in this particular instance isn't relevant, although can be worth looking at - see Fordson/Snap and others).
You may want to try out a more graphical format such as Grid - https://moodle.org/plugins/format_grid But there are others worth looking at in the plugins database.
