I understand your frustration about the UX improvements to Moodle, as it may look different from what you're used to. A constructive approach to solving your issues would be the best course of action to take.
As far as I understand it, your main issues are with the new My Overview block that has replaced the old block Course Overview as core. This block can still be installed and used instead of the one you're somewhat unhappy with, if you're a systems administrator for your Moodle. If you're not the systems administrator, you could point the person in charge of this to the correct plugin, so he/she can install and enable it.
There's just one caution: at some stage (in a little over 2 years), the legacy Course Overview block will cease to function, with the release of Moodle 3.7. I strongly hope that you will have gotten used to the new and improved My Overview block by then and that you can see some of the positives of this new redesigned block:

- sorting courses according to Current, Future and Completed
- more detailed course completion details
