I don't think there is anything specific here to help, unless there is a recent development so perhaps the best place to start would be with the Progress Bar for Moodle up to v3.1 or the Completion Progress Block for up to v3.3. I am not sure how fine the distinctions are in the Completion Progress Block, but I do know it relies on completion settings of activities/resources in the course and when they should be completed by being properly set in the course. It may be that the Completion Progress Block shows only not started and completed tasks, but it may show what has been viewed at least whereas the Progress Bar only shows tasks and completed tasks.
Using one of these tools may help you get an idea on pinpointing exactly what it is you want and how to achieve it.
