I'm guessing Stafford Global might have some guidelines for staff to follow in terms of rules or expectations. My only suggestion with Moodle would be to learn how the tools work and then push your imagination on how they can be applied with students.
The activities and resources of Moodle have many applications in the classroom beyond what is the tool's obvious purpose.
