Rick, you're right, that would be a solution to the immediate problem, but then, getting permissions to use the institution domain, the automatic links to the student systems, ensuring funding for the machine, etc., are a nightmare. I once ran a semester using Canvas, hosted externally. I could do that with only a small number of of students, and manually setting things, but not for a large course.
Yes, I understand what you are saying. I teach at a big 10 university, so my situation might be different. I still have everything in my course on my own server. But I do have to link to it from the university's Canvas LMS system.
