One possible method would be to use the Upload courses functionality to recreate the enrolment methods. As mentioned in the documentation, the functionality can be used to update existing courses such as enable and configure enrolment methods; it is not just for creating new courses. However, please note that Upload courses is not yet compatible with all enrolment methods.
