Just install the database on the second server and point the $CFG->dbhost at the hostname or the IP of the database server. You will need to modify the GRANT (if MySQL) command to allow appropriate permissions for the web server host. But that's about it.
It's actually easier from the point of view of tuning the servers for optimal performance.
We use this "technique" because our webmasters advised to do so because of speed and reliability. It actually works really well.
Just go to config.php and change your host to the IP of the db server (if the servers are on the same netwerk, use internal IP to reduce external bandwidth usage if limited) and create a database with a user on the db server. That's it!
