If courses don't have an end date or are not completed (no activity completion tracking), they will remain in the In progress column. There could be a way to add a course end date through Moodle Adminer, in the mdl_course table. There is a column 'enddate' that requires a bigint value in the UNIX epoch format for time/date.

In the long run, you'll have to make the switch, as this legacy plugin will not be working from Moodle 3.7 (in approx 2 years).
